Sylvain has taken the helm of his fast-growing restaurant in Bordes.
A lover of good food and music, with his involvement in organising the Pyrène Festival, this chef, who cut his teeth working with such greats as Philippe Camdeborde and Éric Dequin, offers you a culinary adventure.
His menus are dictated by seasonal produce, the weather and his years of experience in Corsica, Switzerland and Savoie. Traditional recipes are revisited and sublimated. Each day a different home-cooked menu is proposed, and in the evenings the friendly and gourmet bistronomy is at work.
